Herbal Tea Blend – Blue Butterfly Pea, Pandan and Lemongrass
The original colour changing tea powder conveniently packed in ready to use tea bags, featured on TV shows and articles. It originates in South East Asia where it is extremely popular as a cold brew ice tea and an ingredient in bubble teas. As its popularity grows in the UK and Europe it is becoming known as the magic ingredient in blue gin cocktails!
Blue Pea (Clitoria Ternatea) is a perennial herbaceous plant, with elliptic, obtuse leaves. It grows as a vine or creeper, doing well in moist, neutral soil. The most interesting feature of the plant is the colour of its flowers, a bright deep blue with light yellow markings. They are about 4 cm (1.6 in) long by 3 cm (1.2 in) wide. When added to water, the colour will slowly change. If an acid such as lemon juice is added it will change to purple. These properties are extremely useful when making bubble teas and fun cocktails.
In Southeast Asian countries, especially Thailand, the flower is used as a natural food colouring and added to things like rice, cakes, drinks and desserts. In Europe it is most widely known as the magic ingredient in a colour changing gin cocktail. The blue drink will fizz and turn pink pink when mixed with a carbonated mixer such as tonic water or purple when lemon is added.
